Vanilla bean ice cream

  • 6 cups milk

  • 6 cups half and half

  • 4 cups cream

  • 1 T salt

  • 4 vanilla beans

  • 12.5 oz yolks

  • 3 cups sugar

  • 1 t guar gum

  • ½ cup vodka


Over a medium heat, cook the dairy, salt and vanilla beans until very hot (do not boil). Wrap in plastic and steep for at least 1 hour (more is better)

Reheat the liquid and in a large mixing bowl, mix yolks and sugar until smooth and then temper with the hot liquid

Make the custard, then add the guar gum and strain into an ice cream bucket. Let cool in an ice bath.

Once cooled, add the vodka and chill overnight
