Banana chai scones

  • 400 grams AP

  • 1 t salt

  • 1 T baking powder

  • 2 T ground chai tea

  • 45 grams coconut sugar

  • 4 oz butter, cold and cut into small pieces

  • 200 grams diced ripe bananas mixed with 1 T coconut sugar (let sit for a few minutes)

  • 100 grams dry dates – cut into ½ inch pieces, (mixed with about 2 T of the dry mixture to separate them)

  • 2 large eggs

  • 180 grams whole milk yogurt

  • 1 t vanilla


Mix flour, salt, baking powder, chai and sugar, then sift

Add butter and rub it between your hands. Make sure to leave some butter pieces throughout the mixture

Add the bananas and dried dates and mix to combine

Mix eggs with yogurt and vanilla then fold in

Shape into a disc, garnish with dried dates and freeze

Before baking: brush the top and back with cream, and sprinkle with raw sugar
